Winemaker’s dinner Envínate

On May 28, we will be visited by Roberto Santana, winemaker, founder and co-owner of Envínate
– one of the most influential voices in the new wave of terroir-driven Spanish wine.

Envínate was established in 2005 by four friends with a background in oenology studies in Alicante. Their philosophy is uncompromising and simple:
Let each wine tell the story of the place it comes from.
Instead of focusing on grape variety or technique, soil, altitude, exposure and microclimate take center stage.
The result is wines that vibrate with energy, texture and identity.

With vineyards in Tenerife, Ribeira Sacra and Almansa, Envínate creates wines that are a clear expression of the regions they come from. Volcanic soil, slate and chalky hills give different but very precise expressions – always with freshness, nerve and structure.

Roberto Santana has particularly distinguished himself through his work with extreme vineyards – steep slopes, old ungrafted vines and areas previously considered too demanding to produce great wine. With respect for traditional cultivation, hand-harvesting, spontaneous fermentation and minimal intervention in the cellar, we create wines that are both precise and vibrant.

We serve a 4-course menu with 6 customized wines, followed by coffee and confectionery.
